Lassies Toast Gin

A deliciously herbal gin with elements of citrus and hints of tea.

Lassies Toast Gin is inspired by the Moorland Tea that the poet Robert Burns is reputed to have enjoyed and is made to a unique recipe designed in-house.

Whether it’s women raising a glass to – and with – other women or men toasting the ‘lassies’ as is traditional on Burns Night, this wee dram has been designed as a drink for anyone, at any time. It features bilberry leaves, strawberry leaves, heather tops, speedwell and wild thyme, ingredients found in the Moorland Tea recipe. Elegant and delicious, this very special gin is the perfect tipple for any celebration whether that be weddings, engagement parties, hen parties, Mother’s Day, or just any time you want to raise a glass and toast the women in your life.

Rock Rose Gin

Botanicals

  • Speedwell

    A pretty white and blue-flowered perennial blooming from early spring onwards. The leaves were used to make Moorland Tea by Robert Burns and are now one of the hero botanicals in our Lassies Toast Gin. They are quite bitter and have a slight astringency to taste raw but when distilled their flavour profile changes to have liquorice and treacle-like notes.

  • Wild Thyme

    The most widespread of the thyme family. It is an aromatic, creeping plant with oval leaves and densely packed heads of pinky-purpley flowers. As a key ingredient in Robert Burns’ Moorland Tea we have used it in our Lassies Toast Edition and it provides earthy tones with slight lemon and mint notes. Interestingly the Highlanders thought that thyme gave them courage and strength. Young girls would also wear sprigs of thyme, lavender and mint to bring them sweethearts!

  • Blaeberry leaf

    The leaves of a bilberry, or blaeberry bush as we know it, are another hero botanical in Lassies Toast gin. The Gaelic name is ‘Fraghan’ which means ‘growing among the heather’, which is exactly where you will find it growing in Dunnet. The leaves were once used to make Moorland Tea and they provide a very distinct ‘tea’ flavour which works very well with the juniper in this edition.
